CRANBERRY PINEAPPLE RELISH

INGREDIENTS

2 Cans (7-oz. each) crushed pineapple in juice
1 Bag (12 oz.) cranberries, fresh or frozen
1/2 Cup light brown sugar or Splenda
Pinch of ground allspice
1/3 Cup chopped walnuts

DIRECTIONS

1. Drain pineapple, reserving liquid in a measuring cup. Set pineapple aside. Add water to liquid to measure one cup.

2. Place cranberries, sugar, allspice and the reserved liquid in a deep saucepan. Bring to a boil, reduce heat and simmer until berries pop and are very soft, about 15 minutes. Remove from heat and mix in pineapple and walnuts.

3. Turn relish into a serving dish. Cool to room temperature and serve. Or, place in airtight container and refrigerate up to five days.
