ROASTED PEPPER TOMATO CROSTINI

INGREDIENTS

18 Slices Italian bread, 1/2 inch thick

2 Large tomatoes, diced (2cups)

1/4 Cup chopped fresh basil leaves

1 Tbsp. balsamic vinegar

1/4 Tsp. salt

1 Jar (7 ounces) roasted red bell peppers, drained and chopped

1/3 Cup shredded mozzarella cheese

DIRECTIONS

1. Heat coals or gas grill for direct heat. Grill bread uncovered 4 to 6 inches from medium heat 4 to 6 minutes, turning once, until golden brown.

2. Mix tomatoes, basil, vinegar, salt and bell peppers. Spread tomato mixture on bread. Top each slice with about 1 teaspoon cheese.

3. Cover and grill 4 to 6 inches from medium heat about 5 minutes or until cheese is melted. Crostinis can be done on broiler in stove. Serve hot.
